A few years back a co-worker brought this Christmas Bark into work around Christmas time. When I found out how easy it was to make I was all over it. So I LOVE to make cookies for my family at Christmas time and I think they LOVE to get them from me. However, having a chronic pain illness can make standing and baking for hours very difficult.
As a matter of fact if I make anything at all this year, it will be this Christmas Bark. Usually, I make chocolate chip, snickerdoodles and peanut butter kiss cookies. One year, I also make banana bread and rice crispy treats. Each year, I love finding a new recipe that I can try and I add it to the collection of goodies. Since I’m not feeling myself this year, the Bark will have to do. Now I am going to share with you, so you can put a smile on your family’s face too.

Christmas Bark Recipe
Ingredients:
1 sleeve of saltine crackers (more of less depending on your cookie sheet size) 1 cup butter
3/4 cup brown sugar
12 ounces mini chocolate chips
1/2 cup Heath toffee bits
1/2 cup chopped nuts
1/2 cup peppermint (optional)
1/2 cup sprinkles (optional)
Directions:
- Lay down foil or parchment paper on a cookie sheet. Spray with non-stick spray. Preheat oven to 350 degrees
- Arrange saltines on foil.
- Melt butter and brown sugar in a pan stirring constantly for about 3 minutes.
- Mixture will have thickened. Pour over crackers completely. Be careful not to saturate crackers too much or it will be hard to break apart later.
- Bake for 5 minutes.
- Pour chocolate chips over crackers, spread with a knife while it melts.
- Sprinkle toppings over crackers.
- Place in refrigerator until hard.
- Break into bite-sized pieces.

This sounds so decadent! This may be the first recipe like this that I’ve found that includes crackers and toffee but it sounds so delicious.
