You might be saying, “Am I on the right website? FibroMomBlog doesn’t blog about recipes and food!” Well, you are in the right place and you are correct I don’t usually blog about recipes. However, since it is holiday season I feel like it is the time to add recipes that have meaning to me. This post will be about my grandma’s broccoli casserole and what it means to me.
What does this casserole mean to me:
One of my favorite things to do as a child was to visit my dad’s mom. I would stay the weekend and go to church with her. Every Sunday my grandma cooked a nice meal that we would eat after church. One of my favorite memories was walking in to the house after church and smelling the goodness in the air.
My grandma would always make me try things I didn’t think I would like such as okra (yuck)! One time she served this broccoli casserole and I will never forget it. As I got older I asked for the recipe and started making it for my family. Now, I am going to share it with you.
Martha’s Broccoli Casserole
This is the ultimate in comfort food for me. Once you try this, it will be a favorite in your house as well.
Ingredients:
- 1 bag of Steamable Broccoli (or fresh slightly cooked)
- 1 can of cream of chicken soup
- 1 cup of mayo
- 1 egg
- I package of crackers
- 1 cup shredded cheddar cheese
Directions:
I used to use fresh broccoli and cut it up and wash it, then steam for about 5 minutes. Now my life is crazy so I use the microwavable kind. Either will work, you just want to cook it slightly so it isn’t so hard.
- Preheat oven to 350 degrees. Meanwhile microwave broccoli.
- Once broccoli is done, combine all ingredients except cheese and crackers in a medium bowl.
- Spray a 9 x 9 casserole dish with non-stick spray. Then pour mixed ingredients into casserole.
- Top with crumbled crackers and cheese.
- Bake for 30 minutes, or until casserole is bubbly inside. Let cool for 5 minutes and serve.
I have a big family so I usually double this recipe and then put it in a 9 x 13 casserole dish. You still cook the dish for same amount of time. Another variation that I have recently done is to add cooked chicken to the casserole and then it becomes a main dish instead of a side dish.
When you have a chronic illness and you don’t have much energy this is an excellent, quick dinner to make. You could also make this ahead of time and heat up- add some rolls and/or a salad and voila!
